The taste of honey is  based on what types of pollen the honey bees were eating. May honey means pollen eaten during the month of April and pulled in May. This years May honey has a orangy-spicy complexity to it. We think the spice may have come from the large amount of dandelions we had in bloom this year. Being located in such a highly botanical area there are many other types of pollen that come into play in early spring that can effect the flavors of our honey.

Here is a list of what our May honey may contain: Arbutus, Bitter Cherry, Choke Cherry, Dogwood, Black Hawthorn, Big Leaf Maple, Holly, Scotch Broom, Flowering Red Current, Indian Plum, Oregon Grape, Salmon Berry, Black Twin Berry, Buttercups, Camas, Chickweed, Coltsfoot, Fairy-Slipper, Chocolate Lily, Miner’s Lettuce, Forsythia, Saxifrages, Sea Blush, Shooting Stars, Skunk Cabbage, Star Flowers, White Trillium, Wood Violet, Woodland Stars, Willow, Alder, Daffodils, Dandelions, Tulips, Apples, Cherries, Plum, Crocus, Blue Bells, Periwinkle.
