Mud Bay Clams

We are very fortunate to live in an area that provides us with tasty manilla clams. This dish is great for any small clam freshwater or saltwater. Serve with a chilled dry white wine and crusty french bread. 

Ingredients list:

 

1 tsp chipotle chili powder

1 stick of butter

3 cloves of garlic chopped

1 bunch of fresh cilantro chopped

1 thai chili minced

1 roasted red pepper*

1 cup of dry white wine or IPA beer

! cup chicken or clam broth

3 lbs of clams

Place all ingredients in a large sauce pan. Turn the heat to high. Steam for 7 minutes. Remove all unopened clams. Serve hot with crusty bread. 

*Roasting red peppers is simple. Heat oven to 425. Place the pepper on a cookie sheet. Roast for 10 minutes or until soft. Place inside of a paper bag to allow it to sweat for 10 minutes. Remove from the bag. Peel and remove seeds and white segments. Chop and add to the sauce pan.
