Greek Chicken Kebabs
I crave Greek food on a regular basis. This is a simple dish and cost effective dish that always fits the bill. In the Summer months I try and use the gas grill as much as possible. Tasty and succulent this dish is always a crowd pleaser. Give yourself an hour for prep time as you will need to marinate the chicken. Feel free to marinate the chicken overnight if you like for a super fast dinner after work.
Ingredients list:
1 lbs Boneless skinless chicken breast cubed
2 sprigs of fresh chopped rosemary
2 tbsp fresh squeezed lemon juice
1/4 tsp fresh lemon rind
3 tbsp olive oil
1 tsp. fresh chopped oregano
1/2 tsp red pepper flakes
1/2 tsp black pepper
1/2 tsp salt
1/4 water
In a medium size zip lock bag place all of the ingredients listed above. Marinate in the refrigerator for one hour. Meanwhile, soak 5 or 6 wooden squires in water.
Heat grill to 425. Skewer chicken onto metal skewers (that is an odd sentence). Make sure a leave a tiny space between the cubes of chicken to ensure proper cooking needs. Place chicken on the grill. Wait 5 minutes then turn. Wait another 5 minutes. Pull the chicken off the grill onto a clean plate and cover with aluminum foil. Wait 5 minutes and serve. I like to serve this with a nice Greek salad or Orzo Salad.
