Fennel Salad
As a kid I absolutely hated fennel. Then I tried this dish. Fresh fennel bulbs have a fresh light licorice flavor. Once mixed with onions and a fresh thyme I became a fennel fan.
Ingredients list:
1 large fennel bulb shaved thin
1 large white onion shaved thin
1 tsp of fresh cracked pepper
1 tsp of course sea salt
2 tbls of fresh chopped thyme
1/2 cup of olive oil
1/2 cup of shaved Romano cheese
Mix in a large bowl. Allow to chill in the refrigerator for one hour. Serve.
