Cherry Chocolate Cookies
My neighbor made these for me one Christmas. I love chocolate and cherries together. This recipe is one of my favorites. I should note, it never makes enough, but that is just me.
Ingredients list:
24 Maraschino cherries
1/2 cup of soft butter
3/4 cup brown sugar
1 tbsp of Maraschino cherry juice
1 tsp vanilla extract
1 1/2 cup flour
1/8 tsp salt
1 cup of semi-sweet chocolate chips
1/2 tsp shortening
Set oven to 350.
Dry off each cherry. In a stand mixer with paddle cream butter and sugar together. Add cherry juice and vanilla. Slowly add flour and salt. Cover mixture and place in fridge for 1 hour. Insert a chocolate chip into each cherry. Wrap dough around each cherry to form a ball. Cover your cookie sheet with parchment paper. Bake for 15-17 minutes. Melt shortening and remaining chocolate chips. Dunk baked cookies into chocolate. Cool on a rack.
If the dough is to hard to work with add a little more cherry juice. If you would like to try something different add in a hazelnut inside the cherry instead of the chocolate chip.
