Braised Pork Loin Salad

This is a house favorite. Hearty cold salad with a hot fresh poached egg a top a pile of crunchy and tangy vegetables and a nice helping of succulent pork loin. 

Ingredients list:

1/2 lbs of roasted pork tenderloin 

1/2 cup of sesame covered almonds

3 cups of spring salad mix

1 poached egg per person

1/2 cup of shaved Romano cheese

Dressing:

1 heaping tbsp of honey

1 tsp of yellow mustard

2 tsp of Oxymel

1 tsp of cracked black pepper

1 tsp of course sea salt

3 tbsp of chopped fresh tarragon

Mix dressing ingredients in a glass jar with a lid. Shake well. 

Build your salad on each plate. Start by chopping up the pork lion. Toss the spring salad with the dressing, add the pork, almonds and Romano cheese. Place a poached egg on the very top. Serve immediately.
