Orzo Salad

Orzo Salad


This is a refreshing and healthy cold salad. Perfect with Greek Kababs or a nice slab of garlic bread. You can purchase orzo in the pasta section at your local grocery store. 


Ingredients list:

1 package of Orzo

2 tbsp of freshly squeezed lemon juice

1 cup of crumbled feta cheese

3 tbsp of fresh chopped flat leaf parsley plus 2 tbls for presentation

1 small minced red onion

6 pitted Kalamata olives, chopped

1/4 cup of olive oil

1 medium tomato, chopped

1 medium peeled and chopped cucumber

1/4 cup of chopped Pepperoncinis 

1/4 cup of toasted pine nuts


In a medium sauce pan boil orzo. (follow the directions on the orzo package). Drain orzo. Pour back into the medium sauce pan off the heat. Add all the other listed ingredients. Stir. Cover and place in the refrigerator for until cooled. I like to stir it every fifteen minutes until it has cooled fully. 

When you are ready to serve add another 2 tbls of fresh flat leave parsley to finish. Salt and Pepper to taste.
